Stifado

An acrostic, written in honour of a dish i enjoyed a lot of during my travels to the greek islands.

Stifado

Served up in a traditional greek pot

Traditionally cooked up with beef, tomatoes and onions

It’s usually served up with some sort of pasta

Fresh bay leaves, cinnamon

And all spice give it its authentic flavour

Dry red wine goes as a good accompanient

Of course – if you want it with chips – the chef will be happy to provide them

Spaghetti II

I

Like long blonde hairs

they sit in the silvery tube

waiting to lie in the bubble bath

of water, oil and salt

II

Resolve in the steam ? a surprise

Durum wheat holding out

until the moment arrives

and surrender to the bubbling water

Sauce bubbles away as

they sit in the jacuzzi

Tomatoes onions and carrot

combine for the perfect accompaniment

IV

Meat or Veg ?

the obvious question

Mince or Meatballs for the carnivores

Mushrooms and Marrow for the herbivores

Growing Up

there were moments

i couldn’t stomach

whole foods

The magic drink

coloured bright orange

was a staple

between meal times

a weapon in

the kitchen armoury

four silver prongs

taking on vegetable, meat or fruit

Tomatoes i’d eat

after being crushed and beat

and served up on bread

to make sure i was fed

Bananas broke up

and served up in some rice

or a vanilla custard

that tasted nice

To some

its a heavenly dish

kept wrapped up in its pastry parcel

king of the curries (created by the british)

arm yourself though – the recipes vary

Made the same way of the days of empire

a meat is spiced in a number of spices and

rolled around in a sauce of tomatoes, spices and cream

some might say – its not spicy enough, but

as it was devised for those with a delicate pallette

lots of people enjoy it as a main meal or teatime snack

as its not as fiery as its madras or vindaloo cousins

It’s like you were made, for the mezze

Vine Leaves and Feta Cheese

Even the tomatoes seem juicier when you’re around

Gem of a fruit of the vine

Roasted lamb seems to like you

Even served as a stuffing

Enjoyed more now – in jars and in pastes but

Never forget – how tasty you are off the vine

Ripe tasty bananas slapped between two pieces of buttered bread, or

Egg, boiled and salted, and served up with bread soldiers

A hearty breakfast – they say, is fit for a

King….Bacon, Eggs, sausage, tomatoes….

French toast is an alternative if you don’t like chasing your food

As are cereals….but don’t forget toast and

Strawberry jam….its a crowd pleaser

That’ll please any fussy eater (or cheese if they don’t like the sweet stuff)
